  • Freshness
    • Is the entire packet used within a month?
    • Is the amount of coffee grinded adequate for each serving?
  • Brewing Recipes
    • Is the coffee extracted with the correct amount of beans?
    • Is the coffee extracted with the correct amount of water?
  • Machine Maintenance
    • Is the machine handled correctly?
    • Is there daily cleaning for all machines?
  • Cleanliness of cups
    • Is every drink served in clean and appropriate cups?
  • Proper Extraction
    • Is proper tamping achieved?
    • Is the ideal amount of crema being extracted?

There are three levels of certification: Bronze, Silver, and Gold.
Seminars to acquire the knowledge and skills necessary to achieve the certification are supervised by instructors from the UCC Coffee Academy. *1
In addition to the certificate and certification sticker that can be displayed, certified stores receive special privileges according to their rank.
*1 UCC Coffee Academy is an educational institution where students can learn in a systematic and step-by-step manner. Our academy allows for the sharing of specialized knowledge and techniques of coffee that the UCC Group has cultivated since its establishment in 1933. All instructors are coffee professionals with numerous coffee-related qualifications and awards from competitions.
